When making ratatouille, we often repeat the same ingredients. But what if we added butternut? We’re sure this will become your new favorite. Ratatouille is quick, simple, and pairs beautifully with all types of meat, and in this case, with fish, thanks to a delicious confit cod.
Dice the butternut into small cubes.
Remove the seeds from the peppers and dice them.
Peel the onion and slice it thinly (julienne).
In a saucepan with plenty of hot oil at 180 °C, fry each vegetable separately. Make sure they remain al dente and keep their color.
In a pan, heat the tomato sauce and reduce it for about 10 minutes. Add the vegetables and cook everything together for another 10 minutes.
Cut the cod into 120 g portions. Place in a saucepan, cover with olive oil, and cook at around 65 °C, gently stirring in circular motions for about 10 minutes.
Serve the ratatouille hot, topped with the confit cod.
