Poké bowls are all the rage! At Love Butternut, we couldn’t miss the chance to create our own version of this Hawaiian-inspired dish featuring butternut and Heura.
Rinse the rice and cook for about 12 minutes. Drain and let cool.
Cut the butternut into small cubes.
Dice the cubes into brunoise.
Peel and slice the onion into julienne.
Cut the Heura into thick julienne strips.
In a pan with a bit of oil, sauté the onion, bell pepper, and butternut. Then add the Heura.
In the same pan, add honey, lemon juice, and soy sauce. Let it reduce by half.
Mix the vegetables with the Heura and the sauce. Serve with the rice and sprinkle with chopped parsley.
