A creamy soup is one of the first dishes that comes to mind when thinking of butternut squash. But what if we add a touch of mint and a few Bimi® florets? The result is a soup with the freshest flavour imaginable.
Peel the butternut and cut it into cubes.
Peel and wash the potatoes and leeks, then dice them.
Blanch the Bimi® stems in boiling water for 2 minutes.
Refresh them in iced water.
Place the vegetables in a saucepan, cover with water and cook for about 20 minutes.
In a Thermomix or high-powered blender, combine all the vegetables with a little of the cooking liquid, add the mint and a drizzle of olive oil, and blend on maximum speed for 5 minutes.
Serve the soup garnished with Bimi® florets and a few drops of olive oil.
You can serve this soup with crispy fried bread cubes.
