Ingredientes
- 1 kg sirloin
- 500 g roasted butternut squash
- To taste: salt, freshly ground black pepper, sweet paprika, extra virgin olive oil, fresh thyme
Instructions
Press the roasted butternut through a food mill to make the purée.
Cut the pork tenderloin into medallions.
Season the butternut with paprika, pepper, and extra virgin olive oil.
Season the tenderloin with salt and pepper, and brush with a little oil.
Sear the tenderloin on both sides in a very hot pan.
Serve with the butternut purée on the side.

- Never pierce the meat with a fork when flipping it — this causes it to lose its juices.
